Wedding Dessert

If there’s a part of the meal more fun than dessert, no one knows what it is, and the very essence of it is perfect for a wedding. Sweetness just goes well with sweethearts, and it’s all about choices. The days when a traditional wedding cake was the only acceptable wedding choice are far behind us, and Hudson Valley bakers delight in getting creative.

Dessert tables full of tarts and cookies? Donut wall? Multi-tiered cakes can be traditional fantasias of delicate fondant or postmodernist metallic marvels. Smaller cakes, for smaller weddings, offer the baker the chance to concentrate on your desired “wow” factor and execute it flawlessly. And just about anything you could want can be made gluten-free or organic in these parts.

Individualized desserts are a safety-forward option, but they’ve always made for a wonderful dining experience. Ice cream cones can be used for pudding, or fresh berries atop sponge cake. How about frothy ice cream shakes garnished with colorful cookies? Cake pops have become a fine art. Martini glasses are elegant filled with fruit and topped with chocolate. Cupcakes and mini-cakes can be served on monogrammed coasters.

For sugar- or gluten-free guests, consider adding a fruit station. Few things are lovelier than fruits and berries. Add yogurt and various options for toppings (chopped nuts, granolas, sprigs of mint) and guests can build their own healthy sweet treats.

You might want to plan on two servings per guest; individual serving containers make it easy to take something tasty home to savor alongside the memories.
